A Comparison of U. S. and Canadian Consumers' Willingness to Pay for Red-Meat Traceability AgEcon

Auction experiments at locations in the US and Canada are used to determine consumers' willingness to pay for red-meat traceability and other enhanced food characteristics. Consumers in both countries are found to be willing to pay a positive amount for traceability, but would pay even more if traceability were bundled with other characteristics such as animal welfare or enhanced food safety. The results suggest a larger Canadian market for traceability, on a percentage basis, for beef than in the US.

System dynamics is an appropriate tool to build management models due to its ease of application in solving unstructured problems. In the twenty-first century the sustainability of organizations is influenced by the way it manages its knowledge. In this sense, knowledge management (KM) represents a strategy that contributes to improving the production supply chain (SC) of the agri-food industry (AFI). A Critical Account of the Relationship between Institutional Trust, Risk Perception, and Technology Acceptance with an Application to Genetically Modified Foods AgEcon

This article critically reflects on the widely held view of a causal chain with trust in public authorities impacting technology acceptance via perceived risk. It first puts forward conceptual reason against this view, as the presence of risk is a precondition for trust playing a role in decision making. Second, results from consumer surveys in Italy and Germany are presented that support the associationist model as counter hypothesis. In that view, trust and risk judgments are driven by and thus simply indicators of higher order attitudes toward a certain technology which determine acceptance instead. The implications of these findings are discussed.

A CROSS SECTIONAL ANALYSIS OF CONSUMER TRENDS IN RED MEAT CONSUMPTION AgEcon

Food consumption patterns have received considerable attention lately, especially changes in red meat consumption. This article examines and analyzes changes in meat consumption patterns in a southern state. Differences are reported based on demographics and consumer expressed preferences. The results reaffirm the negative role of health concerns and fat on red meat consumption and the positive influence on poultry and seafood. The findings agree with related other studies and suggest that further research into the changing meat consumption patterns is warranted.

A cross-cultural study of cereal foods' quality perception AgEcon

Cereal foods' production and use show substantial heterogeneity across Europe. For a category central in most EU diets, cereal foods' quality perception is, nevertheless, surprisingly understudied. With this in mind, 357 Danish, Lithuanian and Portuguese citizens were inquired about the importance of several cues and dimensions in their evaluation of the perceived quality of bread, cookies, breakfast cereals, pasta and vodka. Portuguese and Lithuanians consistently gave a significantly higher average importance to all the cues and quality dimensions considered, for all products, than their Danish counterparts. A DAY WITHOUT FAFH IS A DAY WITH BETTER NUTRITION AgEcon

Two day food intakes from the continuing Survey of Individual Food Intake is used to compare nutrition of individuals who on one day had a FAFH meal and on the other did not. It is found that nutrition on the FAFH day is consistently worse for almost all population subgroups. In particular, significantly more calories are consumed on a day with FAFH meal.

A Descriptive Analysis of Recent Trends in the International Market for Dry Milk Products AgEcon

This Discussion Paper provides a comprehensive description of longer-term trends for exports and world prices of dry milk products. The importance of U.S. exports of dry milk products is suggested by figures in the paper showing that in 2000, 17% of U.S. nonfat dry milk, 35% of dry whey, 47% of lactose, and 11% of whey protein concentrates were exported. The Gould-Villarreal study documents the decline in world trade in nonfat dry milk and expansion of world trade in whole milk powder. The paper suggests that collective product mix decisions of the U.S. dairy industry are partially out-of-sync with world demand. Other implications for U.S. dairy exporters of changes in world demand for dry milk products are discussed.

A Dietary Assessment of the U.S. Food Supply: Comparing Per Capita Food Consumption with Food Guide Pyramid Serving Recommendations AgEcon

Most American diets do not meet Federal Food Guide Pyramid dietary recommendations. On average, people consume too many servings of added fats and sugars and too few servings of fruits, vegetables, dairy products, lean meats, and foods made from whole grains compared with a reference set of Food Guide Pyramid serving recommendations appropriate to the age and gender composition of the U.S. population. In addition, while the healthfulness of diets has improved over time, the pace of improvement has been uneven. A Discriminant Analysis of Factors Associated with The Adoption Of Certified Organic Farming By Smallholder Farmers in Kwazulu-Natal, South Africa AgEcon

Discriminant analysis was used to identify the characteristics that distinguish between fully-certified organic, partially-certified organic and non-organic farmers in Umbumbulu district, KwaZulu-Natal (KZN), South Africa (SA) during October- November 2004. 200 farmers interviewed were drawn by purposively selecting the 151 members of the Ezemvelo Farmers’ Organisation (EFO), and by random sampling 49 non-organic farmers in wards neighbouring EFO. Results from the two estimated discriminant functions suggested that farmers with higher household sizes, incomes, input costs per hectare and number of chickens owned, locations further from innovators and less risk aversion were more likely to be certified as organic. A DISTRIBUTIONAL ANALYSIS OF THE COSTS OF FOODBORNE ILLNESS: WHO ULTIMATELY PAYS? AgEcon

This paper traces the economic impact of the costs of foodborne illness on the U.S. economy using a Social Accounting Matrix (SAM) framework. Previous estimates of the costs of seven foodborne pathogens are disaggregated by type, and distributed across the population using data from the National Health Interview Survey. Initial income losses resulting from premature death cause a decrease in economic activity. Medical costs, in contrast, result in economic growth, though this growth does not outweigh the total costs of premature death. A SAM accounting of how the costs of illness are diffused through the economy provides useful information for policy makers.

A double-hurdle model of Irish households' foodservice expenditure patterns AgEcon

The aim of this paper is to analyse the various factors fuelling demand for Food- Away - From- Home (FAFH) in Ireland. The two largest components of this industry, the quick- service sector (fast food and takeaway) and the full- service sector (hotel and restaurant meals), are analysed using the most recently available Household Budget Survey data for Ireland. The results from a Box- Cox double hurdle model indicate that different variables affect expenditure in the different sectors in different ways. Income has a greater effect on full- service expenditure than on quick- service. A Dual Response Choice Experiments (DRCE) design to assess rabbit meat preference in Catalonia: A Heteroescedatistic Extreme-Value Model AgEcon

Our paper analyzes consumer preferences toward fresh rabbit meat and alternative marketing formats for rabbit meat. The empirical analysis uses consumer-level questionnaires to elicit information regarding consumer attitudes toward rabbit meat in Catalonia (Spain). We use the Dual Response Choice Experiment (DRCE) design which allows for analyzing forced and unforced options in choice experiments using the same sample. The Heteroscedastic Extreme- Value (HEV) model is used due to its relaxation of the restrictive assumption made in the Multinomial Logit Model regarding the identically distributed error term across alternatives.
